Enjoyed baking this Carrot Cake with my girls especially since it requires 2 bowls which allows them each to easily help split the job. 1 ¾ Cup Flour ¾ tsp cinnamon ¾ tsp baking soda ¾ tsp baking powder ¾ tsp sea salt ¾ tsp nutmeg 3 eggs 1 ½ cup brown sugar 1 cup vegetable oil ¾ cup crushed pineapple 1 tsp vanilla bean paste 1 ½ cup shredded carrots 1 cup shredded coconut 1. Preheat oven to 300 2. In one bowl combine all dry ingredients 3. In 2nd bowl combine all wet ingredients 4. Using a rubber spatula fold in carrots and coconut into wet mix 5. Let wet mixture sit for 5 minutes 6. Then mix dry and wet ingredients together with spatula 7. Lightly spray pan(s) then pour in batter 8. Bake for 15 minutes then rotate pan 9. Bake for a second 15 minutes* Depending on type and number of pans you may need to cook more / less. I used a large, deep glass pan and it took a total of 50 minutes to bake and I rotated my pan every 15 minutes til cooked. Cream Cheese Frosting: 8 oz Cream Cheese (use real cream cheese not spread or low/no fat) 1 stick of salted butter ½ Tb vanilla bean paste 1/8 tsp sea salt 1 bx (16 oz) powder sugar Mix all ingredients – can add more sugar at ½ cup intervals for thicker frosting. First official day of summer vacation and we’re baking up another tasty treat from BNB Kitchen. 😋 Blueberry Buttermilk Breakfast Cake INGREDIENTS -½ cup (8 tablespoons | 4 oz | 113 g ) unsalted butter, room temperature -zest from 1 large lemon -1 cup (214 g) sugar (set aside 1 tablespoon for sprinkling) -1 egg, room temperature -1 tsp. vanilla -2 cups (256 g) all-purpose flour (set aside 1/4 cup of this to toss with the blueberries) -2 tsp. baking powder -1 tsp. kosher salt (I like 1.25 tsp) -2 cups fresh blueberries, picked over -½ cup buttermilk, INSTRUCTIONS 1. Preheat the oven to 350ºF. Using a stand mixer or hand-held mixer, cream the butter with the lemon zest and the 1 cup minus 1 tablespoon of sugar until light and fluffy. 2. Add the egg and vanilla and beat until combined. Meanwhile, toss the blueberries with ¼ cup of flour in a separate bowl, then whisk together the remaining flour, baking powder and salt (separate bowl). 3. Add half of the flour mixture to the batter, and stir with spatula to incorporate. Add all of the buttermilk. Stir. Add remaining flour, and stir until flour is absorbed. 5. Fold in the blueberries. (Leave excess flour from the blueberry bowl behind.) 6. Grease an 8- or 9-inch square baking pan (or something similar—I prefer this 8-inch pan because I like the thicker pieces) with butter or coat with non-stick spray. If you have parchment paper on hand, line the pan with parchment on top of the butter. Spread the batter into the pan. Sprinkle the batter with the remaining tablespoon of sugar. Bake for 35 to 45 minutes — a 9-inch pan will be done in closer to 35 minutes; an 8-inch pan usually needs 40 to 45 minutes. Check with a toothpick for doneness. If necessary, return pan to oven for a couple of more minutes. (Note: Baking for as long as 10 minutes more might be necessary, especially if you’re using a smaller pan such as an 8×8-inch.) 7. I honestly can’t say the last time I had my hair professionally done. In some ways I’ve felt for a long time it didn’t matter how I looked because I didn’t realize my depression had gotten that bad for that long. My daughter made “Nano’s famous Apple Crisp” - a recipe that belongs to her teacher’s grandmother and can be found at BnB Kitchen: https://www.facebook.com/bnbkitchen1 She was lucky to have Ms Brooke Wright for her 3rd grade year who is one of those teachers whose inspiration stretches beyond the classroom and cuts through even the darkness this pandemic tried to bring Thanks to her this recipe is being enjoyed by more generations ❤️ Prep time: 10 mins Cook time: 45-50 mins ——————-INGREDIENTS——————- Filling: •3 apple pie filling cans (we used the caramel apple because we LOVE caramel) •3/4 c Sugar (to start with) •1/3 c brown sugar •about 2 tbsp butter •top full of vanilla extract •sprinkle to taste—> cinnamon & nutmeg Topping: •1 box of yellow cake mix •2 sticks of butter (melted) •1 c of crushed walnuts or pecans Directions: 1. Preheat oven to 375 degrees. 2. Mix all of the filling ingredients to taste. 3. Put in a deep pan evenly. 4. Sprinkle the cake mix evenly covering the filling mix. 5. Marinate the mix with the melted butter (totally covering the mix). 6. Sprinkle the nuts all over. 7. Place dish on the lower rack at 375 degrees for about 15-20 mins (until boiling). 8.
